The making of the dough is a fine craft that starts at a molecular level.
It all begins with the flour.
Different compositions of wheat blends with the right structure
are chosen by the pizzaioli (pizza chef).
Then, a pick of a perfect time-tested ‘mother yeast’
sends the flour on a memorable journey.
This foundation builds into a remarkable canvas for the pizza.
The dough is alive.
A living, breathing organism that has purpose wired into it.
Begin there and the outcome is already a different one.
The trick is to make the dough rise ‘softly’.
The genius lies in knowing how to ‘sit’ the dough
and how long it should wait its turn.
The kneading is a craft. It’s a lesson in feel and pressure.
A little too much and you risk creating a cracker.
A little too soon and the dough will lie in the oven, weighed down.
Build integrity and it will hold up to the toppings without being leveled.
Pain, passion and a deep sense of workmanship energizes each batch of dough.
The easy part is firing it up.
A square piece of our airy crust pizza is called a petzo.
It means a piece.
A square piece of heaven, if you please.
A true petzo has an organic pattern of air spaces
that hold together a crust with an integrity which speaks of craftsmanship.
The outside is delicately blistered with a delightful char,
created for a perfectly luxurious mouthfeel.
It is rich and bracing, all at once.
Fragrant and aromatic even without the ingredients.
All our pizzas are made in sheets and sold by weight.
Each square petzo is handcut with a pair of scissors.
No pizza wheel slices served here.
Survey the array of fresh pizzas lined up in trays.
Point to the pizza of your choice and ask for a petzo.
You determine the size of the square.
Gesture like a true italian and make the size of the petzo with your hands.
Pick and choose as many little or big petzos you want.
Remember, you want to be fulfilled, not filled up.
